White Chocolate Matcha Protein Bites

I made these once… and now they’re just part of my routine. They’re soft, creamy, slightly sweet, with that matcha vanilla flavour that feels a little elevated, a little addictive.

They’re soft, creamy, lightly sweet, with matcha and vanilla that make them feel a little more elevated than your average snack.

Covered in white chocolate, finished with pistachio.

the recipe

Blend:

  • 1 cup cashews (soaked if you have time, but not essential)
  • ½ cup vanilla protein powder
  • 2 tsp Pure Matcha 
  • ½ cup desiccated coconut
  • 2 tbsp maple syrup
  • 2 tbsp coconut oil
  • 1 tsp vanilla extract
  • splash of coconut milk (just enough to bring it together)

Blend until it forms a soft, sticky dough.

Roll into small balls.
Chill in the fridge for 20–30 minutes.

Melt white chocolate.

Dip each bite, let excess drip off.
Top with crushed pistachio before it sets.

Back in the fridge until firm.
